Friday Favorites – 10/20/23

Happy Friday! We have a teacher workday today. I am looking forward to time with my colleagues and a more relaxed pace to the day! I have some favorites to share with you, so let’s get to it!

Favorite 1: JMU!! Oh, how I love going back to James Madison University! I had the best four years there and it’s always great to go back with my family!

Favorite 2: WATER POLO!! Jack finished up his water polo season this week. It has been so much fun to see him figure out this game and have a bunch of fun!

Favorite 3: RECIPES!! I am getting tired of the dinners I usually make. This week I took to the internet and made two new to us dinners. I found this chicken tortilla soup recipe and this baked shrimp recipe. I didn’t take any pictures of the dinners, but we all thought they were delicious! The next time I make the soup, I will double it or make one and a half times the recipe. Also, we just used store bought tortilla chips. I didn’t make the ones in the recipe. For the shrimp, I will probably use 3/4 of the recommended butter. I did use plant based butter for the shrimp and baked it in a 9×13 Pyrex dish because it is easier to clean. Both recipes made enough for one lunch leftover.

Favorite 4: GIRLFRIENDS!! They’re helping Luke get better and I’m making the most of that time to catch up. We’re meeting for a last minute dinner out. We’re chatting every day with a little tidbits form the day and big advice items. No matter how I’m catching up with them my girlfriends are a favorite!

Hello Monday

We have quite a weekend ahead of us. Between a swim meet, golf practice, Homecoming dance, and a soccer game I think we will be ready for bed on Sunday! I think I’ll use the crockpot for dinner on Sunday so we have an easy dinner waiting for us when it is time to eat. Have a great weekend full of sunshine and books!
