Hello Monday – 5/5/25

Happy Monday! Happy Cinco de Mayo! I love any excuse to have Mexican food and a delicious margarita, so today is always a hit. We had tacos and taco salads last night because I am not sure what tonight is going to bring for dinner. I’m starting the week with Holly and all of you! I have EIGHT GREAT things to share with you about our weekend. We had a busy, mildly productive, and fun weekend that ended on Sunday night with my kitchen looking like a Dawn commercial – so many dishes!

1 – The weekend started on Friday evening, of course! I met my friend Jodi for a long walk, as true mid-40s ladies. We wore our weighted vests, carried handweights, and solved all the problems of the world while we hoofed it around a park.

2 – We were up early on Saturday morning for pool clean up day. We got a lot done and the pool is so much closer to being ready. Only 19 more days! I need to go visit the pool a few more times before it opens to plant flowers, help with some watering, and enjoy the view!

3 – I am still reading middle grade books in a fast and furious manner. I finished a few graphic novels on Saturday. It was lovely to sit on the deck with an ice cold Diet Pepsi and enjoy the weather!

4 – Jeff and I went to his friend’s Kentucky Derby party. Jeff goes almost every year, but I’ve never been able to go. It was so much fun, even if I didn’t win any money on the horses. I was so excited for American Promise because the jockey was from my hometown!

I love this mint julep dress. It’s Lilly and I’ve had it for years, but it is still perfect for Derby day!

5 – Sunday was officially wild animal day at our house. We had a fox hanging out in the yard in the morning. Later in the day, we saw the white coyote that has been hanging around the corn field behind our house. It was pretty far away but it is so white that it is really noticable.

6 – Luke had an early morning soccer game in the rain. It was pretty warm, but those boys were soaked! After all that cheering in the rain, they tied. Darn! But I was happy that no one slipped or fell because the turf was so wet.

7 – Jeff and I worked on some things for the pool website, updating dates and times. It was a good reminder of all the pool time to come. I can’t wait to be sitting under my favorite umbrella reading a good book, while Jack is in the guard chair and Luke is playing with friends!

8 – Even though I used every dish in the kitchen today, I made a lot of shredded chicken. I used it for taquitos, tacos, and chicken salad already. It will be good as a BBQ chicken wrap and quesadillas this week, too. The boys get a little tired of having the same protein all week, but it makes my lunch and dinner planning so much easier.

We have another week off to the races! Jack has a golf match today. Luke has a few PT appointments and soccer/lacrosse practices. Jeff and I are continuing our triple CH roles – chef, chauffer, and cheerleader. Those three CHs keep us busy and are a good time! Don’t forget to link up with us below!     I love the mint julep dress! My hubs has a julep bow tie he wears on Derby Day every year. We are supposed to have a cooler (than normal) week here and our pool is open but not warm enough for me to swim yet. The lake is much warmer. It’s a busy time of year for moms everywhere…enjoy all the fun!

    Ohh! Yum! Tacos and a margarita would go down well right now.
    The pool looks amazing! There are no outdoor pools near me at all, I wish there was.
    Derby day sounds like fun and I love your dress!
