Nine years ago, I transferred to the school where I work now. I was a little nervous and excited. I knew there were going to be great things here – I get to teach Jack once a week, I was going to teach the kids in my neighborhood, my commute is less than two miles, I would get to teach Luke in a year, and I was moving into a great media center! I hoped that I would make some good friends, too. Great news, I did! After nine years, I am so grateful for the people I work with. They are fun, friendly, supportive, and so so kind! As a bonus, many of them are also great cooks and bakers!
One friend, Pam, always brought her taco dip to any gathering with snacks. Baby showers, wedding showers, happy hours, dip day lunches, EVERY TIME! We all love it so much that she started making two when she brought it. Pam retired a few years ago and I was so happy for her, but so sad for us. I loved working with Pam. I learned so much from her and she is incredible with the students! I am fortunate that I still see Pam a few times a year around town. It is always so great to run into her!
I’ve made Pam’s taco dip for my family a few times and everyone loves it! I made it for Easter and decided to share it with you today! So without further adieu, Mrs. Jacobs’ Taco Dip. Enjoy!

Ingredients:
1 – 8 oz sour cream
2 – 8 oz cream cheese
1 – 8 oz bottle taco sauce
1 package taco seasoning
Shredded cheese
Chopped green pepper, tomatoes, and spring onions
- Mix the sour cream, cream cheese, taco sauce, and taco seasoning together. (I use my hand mixer and let the cream cheese soften a little first.)
- Spoon into a dish. (I use a pyrex pie dish.)
- Top with shredded cheese and chopped veggies.
- Serve with tortilla chips. (My favorites are Tortiyahs.)



That’s it! That’s all there is to it, but there is a little bit of magic in that combination that tastes so good! Sometimes I take a little short cut when I make the dip. If I’m in a hurry or the tomatoes don’t look so good, I buy the fresh salsa at the grocery store, drain it, and put that on top instead of the chopped veggies. It’s not quite as good, but it is still delicious!

I love all taco dips! I have one that is very similar and the cream cheese is surprisingly good in it, too! I was famous in the 90s (among about 10 of us) for my dip that had refried beans, sour cream, and all the toppings!
Oh I bet that sunshine felt wonderful! Love that tank top and shirt too; so pretty and colorful.
