I decided to try making Pizza Soup after eating it for years in school and as a teacher. The cafeterias in our school system serve pizza soup with grilled cheese occasionally. It is very similar to tomato soup, but has the spices from pizza sauce and a little cheese. I’ve tried to make it for a long time with Campbell’s tomato soup and it wasn’t quite right. When I was waking through Trader Joe’s a few weeks ago I found a soup that I wanted to try pizza soup with. Guess what, it’s perfect!! There is a little kick with a bunch of tomato. Here’s how I made pizza soup.
Pizza Soup
Trader Joe’s Organic Tomato & Roasted Red Pepper Soup (I used low sodium)
Italian spices (I use McCormick Perfect Pinch Italian)
Grated Parmesan cheese (I use Kraft green jar)
Shredded mozzarella
Pour soup in a sauce pan.
Add some Parmesan cheese and Italian spices to the pan. I add enough so that they will definitely give it some noticeable flavor.
Heat soup according to directions on container.
Sprinkle with shredded mozzarella when ready to serve.
I added a bunch of mozzarella because my boys were tough to convince that they’d like it. They love mozzarella cheese so it did the trick.
