Happy Monday! I spent part of Sunday making my family’s favorite candy. We all love buttercream candy! It is so super easy to make. I usually make it over the course of a day because every step is better when it’s chilled. After I made it on Sunday, I couldn’t help but wonder why I don’t make this more through the year.
When I pulled the recipe out of my recipe box to share it last Thursday, the boys and Jeff said, “Are you making that candy soon?” I wasn’t kidding, we all LOVE it!!
On the top of my paper, I wrote “double this” and I do double it every year, but it makes a lot of candy.
Cream together:
1/2 cup butter
1 box 10x sugar
Add:
4 Tablespoons heavy whipping cream
1 teaspoon vanilla
Cool in refrigerator and them roll into balls.
My mom made vanilla for us one year. I always use it when I’m making a favorite family recipe.
I use mini muffin liners for each of the balls so they are easy to keep separated when they’re finished.
Melt in a double boiler:
2 Tablespoons butter
4 squares chocolate (I use Bakers semi-sweet)
1 square inch paraffin
Once melted, spoon over each cream ball.
This year we tried something new. We’ve been loving candy canes this year so I thought of crushing candy canes and putting them in the melted chocolate on the balls.
I usually cool the balls on trays in my garage or refrigerator for a while. Once they’re cool, I stack them in Tupperware containers and try to hide them from my family. 😉
I am not sure what I will be blogging over the next few weeks. We have a full day of school Monday and Tuesday and a half day on Wednesday. I’m looking forward to some down time with Jeff and the kids. Have a great day full of sunshine and Christmas books!
