Easy Dinner – 12/3/19

Happy Tuesday! During the winter, I love a warm dinner that makes my house smell so good. When my kids ask to take the leftovers for lunch, I really love it!! I figured if I love it, then you will probably love it too! So, I am sharing our interpretation of the famous Mississippi Pot Roast that you can find anywhere on the internet and Pinterest.

Two of my girlfriends and I all buy portions of a cow from a local farmer. We went to middle school with Jon, the local farmer, and he raises his cows right. As we were all trying to figure out the best way to prepare our freezers full of beef, one of the girls suggested Mississippi Pot Roast. She’d heard great things about it and gave it a shot. The initial recipe was just like this one, which is the first to pop up when I did a google search. It sounded good, but I knew my family would need some slight modifications. I hope you’ll try our favorite pot roast!

Favorite Pot Roast

Ingredients:

3-5 pound chuck roast or bottom round roast, or any roast that would be good in a crock pot (I’m a really technical chef, can you tell?? 😂)
1/3 – 1/2 stick of butter, cut into slabs
1 package of Hidden Valley Ranch powder
1 package of gluten free brown gravy mix (The original recipe calls for au jus, but I have a hard time finding a gluten free au jus. The brown gravy mix tastes great!)
Enough cooked rice to serve your family
Steamed broccoli

Directions:

Put the roast in your crockpot.
Put the butter slabs on top of the meat.
Sprinkle with ranch and gravy powders.
Put the lid on and cook on low for 6-8 hours depending on the size of your roast.
When you are ready to eat, serve the meat over rice and broccoli with some of the juices.
This usually makes enough to serve my whole family 1-2 dinners and makes some lunch leftovers too.

When we get our cow portions, we get a lot of ground beef. My family loves when we cook the ground beef in a similar way. Thanks for sharing your recipe Jamie! You don’t need the butter when you make this variation.

Ingredients:
1-2 pounds ground beef
1 package of Hidden Valley Ranch powder
1 package of gluten free brown gravy mix (The original recipe calls for au jus, but I have a hard time finding a gluten free au jus. The brown gravy mix tastes great!)
Enough cooked rice to serve your family
Steamed broccoli

Directions:

Brown the ground beef.
Sprinkle with ranch and gravy packets and add a little water.
Continue cooking until the meat is coated and all powder is mixed in.
Serve over rice with broccoli.
