Let’s Look – 10/9/19

Happy Wednesday! We are off school today and I have no idea what we are going to do. We may go to a state park and hike around or we me stay home and relax while getting things done. Who knows!

My favorite fall recipe is chili! I can hear my mom laughing as she reads this because I used to pick around the beans, eat a ton of oyster crackers, and grumble about eating chili every single time! Literally, every single time! My chili is a lot different than my mom’s and most people’s chili recipes. It’s not soupy at all, but we love it! Also, there isn’t a real recipe. Sorry folks! Here’s how I do it.

Chili

Brown 2 lbs of ground beef or ground chicken and season with taco seasoning according to the packet directions. I make my own taco seasoning here, so I use a few tablespoons and about 2/3 cup of water.

Dump the beef/chicken in the crockpot. Add 2 cans of no sodium added black beans, drained and rinsed, 2 bags of steamed super sweet corn, 2 cans of Rotel, and a bunch of salsa. Sometimes I add jalapeños or a few cans of diced chilies. I’ve used cans of Mexican corn instead of the super sweet corn too.

Cook on low as long as you want, but at least a few hours to get all the flavors together. Serve with Fritos, sour cream, shredded Mexican blend or cheddar cheese. This is also good in a taco shell because it’s not very soupy/runny.

My next favorite recipe is a quick adaptation of Mississippi Pot Roast. The Mississippi Pot Roast has a packet of ranch, a packet of au jus, a stick of butter, and pepperoncinis. We buy a portion of a cow each year so we get a ton of ground beef. My friend Jamie also buys a portion of a cow and she recommended adapting the Mississippi recipe for ground beef. We call it chemical beef because of the packets you dump on the meat and how there is some magical chemistry to make that beef delicious! Here’s how we do it.

Chemical Beef (Mississippi Pot Roast adapted)

Brown 2 lbs of ground beef. Add a packet of ranch and a packet of au jus with a little bit of water (1/4 cup or less) and keep cooking until the water evaporates. Serve over a bunch of steamed broccoli and some brown rice.

My kids loved this!! Jack even asked to have it in his lunch later in the week. He NEVER asks for leftovers in his lunch so this was a super hit!!

    I make a nice thick chili too. I want to be able to scoop it up and eat it with tortilla chips if I want to.
